McColl’s Brewery – owner, director, head brewer and general dogs body.

How much beer do you produce?

20 barrel brewhouse with 40 barrel fermentation capacity – currently brewing 20 barrels per week

Do you have a recipe you are most proud of?

My particular favourite from our core range is an all British IPA, although we are currently maturing a Black Forest (Morello Cherry) Stout and its tasting deliciously sweet and sour.

What plans do you have for the future

A lot, but taking it slowly. We have a great collaboration in the pipeline with another local brewery, a few more limited release and seasonal brews planned and further brewery investment and development, before hopefully some barrel aging.
