Overview

Join us for a practical session demonstrating how to use fungi to produce fermented foods at home.

Workshops with demonstrations on producing your own fermentations – yoghurt, kombucha, kimchi and edible fungi.  Taste some samples and view hands-on preparation.  Live cultures are available to take away and grow at home.

Date: 7th October 2023. 11am and 1pm.

Sessions are free but booking is required.

Topics

The workshop will cover the following:

  • Preparing to ferment.  Equipment and utensils, hygiene and safe processing.
  • Easy steps yoghurt. Choosing ingredients, fermentation temperatures and management.
  • Easy steps kombucha. Ingredients and recipes, fermentation control to target taste.
  • Easy steps kimchi. Vegetable selection, preparation and fermentation management.
  • What can go wrong? Quality assessment and control.

Objectives

Taking the workshop will give you:

  • An overview of fermentation.
  • Demonstrations of ingredients needed to produce simple fermented foods – yoghurt, kombucha and kimchi.
  • Examples of equipment needed and how these are managed for each type of fermentation.
  • Opportunity to discuss experiences with guidance on safety and quality.
